Recipe: Creamy Tomato Soup

About half of the recipes we try from Pinterest are pretty good. This one from Unsophisticook was great, but Kevin's modifications knocked it out of the park. It was so yummy! Did I mention, that this soup is fantastic? Let me know if you agree.

4 tablespoons butter
1 onion chopped
4 garlic cloves, minced
2 (28oz) cans whole tomatoes
2 (16oz) cans chicken stock
1 teaspoon salt
1 teaspoon pepper
1 tablespoon of basil
1 tablespoon of Italian Seasoning
1/2 cup heavy cream

1. In a medium pot, saute onions and garlic in butter over medium heat.
2. Place all of the ingredients (except heavy cream) in pot.
3. Bring to a boil. Then reduce heat and simmer for 10 minutes.
4. Transfer to a blender to puree.
5. After the mixture is pureed, whisk in the heavy cream. Ready to serve.

While the soup is simmering you can make Gouda grilled cheese sandwiches. Amazing! This soup is packed with tons of flavor, and I highly recommend you dip the grilled cheese into the soup.
